ADHD Friendly Recipe for Broccoli & Cauliflower Pasta

Below is a healthy and low effort pasta recipe that basically cooks itself. With some ingredients being optional too!
TIME TO PREPARE
Approximately 20 – 25 minutes with most ingredients cooking themselves.
INGREDIENTS
- One packet of small cauliflower and broccoli florets (you can buy these seperate or choose one if you prefer. I like the floret mixes for convenience).
- One large or two small chicken breasts (optional)
- Penne pasta
- Seasoning – I use ground paprika, powdered garlic, Italian herbs, and all-purpose seasoning, which are all optional. If salt and pepper is all you have, that’s okay too!
- Double cream
- Grated cheese (optional)
METHOD
Step 1
Boil some water in a medium-sized pot and throw your broccoli and cauliflower in along with a pinch of salt to taste. Boil until tender and drain.
Step 2 (Optional)
If you decide to use chicken, dice it into small cubes while your veggies are boiling. I season everything with paprika, garlic and all-purpose seasoning (maybe a sprinkle of chili). But you can use whatever you like. Just salt and pepper work too!

Step 3
Set a pan on medium heat and throw in some butter or oil, whatever you have is fine.
While the pan is getting hot, boil water in a pot and add half a teaspoon of salt. Throw your pasta in according to how many portions you need.
I find that it’s not done right unless you make way too much!
Boil the pasta according to packet instructions (which is usually around 12 to 15 minutes for penne).
Step 4
Once your pan is hot enough, throw the broccoli and cauliflower on. Mush (yes, that is the technical term in my head) the veggies with a wooden spoon or fork and fry for a few minutes until they’re soft and reduced in size.
Add the optional chicken at this point and fry all together until the chicken is browned and fully cooked. It usually takes around 6 to 8 minutes, depending on the size of the cubes. You can check by slicing a piece of chicken in half. If it is while and juices run clear, it is cooked.
Turn down the pan to low heat.
Step 5
Mix the double cream with a little bit of cold water to make it slightly less thick. Add the cream to the pan and stir.
Add a sprinkle of cheese on top. This step is optional. I tend to use lactose free cheddar but the type and amount you choose to use is at your own discretion.
Drain the pasta and add it to the pan once the sauce bubbles.
Stir everything together and serve!
